Paleo Zucchini Meatloaf

Posted on

My husband has recently discovered that he is allergic to a ton of foods, so we have basically been eating paleo or primal since he has to be on a new diet. I concocted this meatloaf last night and was very happy with how it turned out. We served it with spaghetti squash and some leftover sweet potatoes and it was delicious! It makes about 6 adult servings. It fed our family of 2 adults and 2 kids for 2 nights. Win!

I went to a yoga class with a friend the other day. It was my very first yoga class and here are my impressions:

-People wear yoga pants so that they don’t have to look at their cellulite dimples while they hold the downward dog position. I made the mistake of wearing shorts.

-The music they play is crazy hypnotizing.

-While we were laying on the floor in corpse pose and focusing our breathing and completely relaxing our muscles, my nose itched like crazy, so I just had to fight the urge to scratch it. Equal parts hilarious and ridiculous.

-I am all for any exercise that purposefully lays on the ground for five minutes at the end of the workout.

I took Spanish for four years in high school, three years in college and have traveled to Mexico quite a bit. Plus I live in Southern California, so there is Spanish around me every day. But whenever I’m confronted with an opportunity to speak Spanish with someone, I totally clam up. My brain shuts off, I forget all my vocabulary and verb tenses and I’m just afraid that I will look stupid?! What’s with that?! I really want to be fluent in Spanish and be able to use it, but that’s never going to happen if I never practice. Grr. At least I can speak enough to convince my students that I am fluent, so that they don’t cuss at me or talk about me to each other right in front of me. 😉
